Makotoya offers miso nikomi udon, the thick udon noodles simmered in a rich, miso-based broth, serving piping hot in an earthenware pot. The broth balances between saltiness and sweetness. Complimenting by the handmade udon noodles offers a firm chewy texture, the mushroom, spring onions, prawn and fish cake absorbing the broth's flavour. It is very satisfying. Also the attentiveness and the hospitality from the owner's hard work makes it a true representative of Nagoya cuisine that Nagoya should be proud of.

I had never thought that I could love miso udon until I came here. It’s really good! It’s an old school restaurant with traditional recipes and authentic quality. The miso udon here is not as salty as I imaged. Even though the soup is quite dense but you can actually drink it and not feel heavy. The chicken is very testy, the shrimp is crunchy and full of flavors. The noodle is a bit chewy at the beginning but in very fresh and homemade feeling, while you eat, it will get softer to the perfect texture. I will recommend to order the udon with all types of toppings, it has pretty good size to me, but you can order side of rice to go with it if you still have rooms for your stomach. It’s actually very authentic way to enjoy miso udon from what my aunt-in-law, a 70 years old local, told me. I am a miso udon lover now, I can’t wait to come back to this restaurant again!
